The best thing about Thanksgiving is the great number of containers of leftovers that beckon in the fridge for the following few days. I love having turkey soup, a re-creation of turkey dinner, mixed green salad with turkey and turkey sandwiches. Basically, I eat turkey anything, take a nap and I’m good. This has led me to gain back a couple pounds that I had shed earlier, so this was my last indulging sandwich before I say good bye to gravy and gluten’ed bread yet again.
This makes a huge towering turkey sandwich that you have to use both hands to eat. Use any kind of bread, any kind of combinations, add cheese or bacon, or tomatoes, or cucumber…basically anything you want. This is my last turkey sandwich until Christmas comes around.
Ingredients: (In whatever quantity that you like)
Turkey slices
Spinach salad
Cranberry Apple Stuffing
Cranberry Sauce
Cranberry Goat Cheese
Roasted Vegetables
3 slices of Spelt Flaxseed Sunflower Bread (from Terra Bread’s)
2 Tbsp of Gravy
Variations: mustard, cucumber, tomatoes, lettuce, bacon, cheese, mayo….(list goes on and on)
1. Whisk the gravy to make it emulsified again and spoon a couple tablespoons of it onto a slice of bread in a bowl to soak.
2. Toast the remaining 2 slices of bread
3. Start assembly. Spread on Cranberry Sauce
4. Spread on the goat cheese
5. Add some turkey
6. Slice up some roasted apple, carrot and onion
7. Add vegetables
8. Spoon on some stuffing on the other side. Add roasted apple slices.
9. Add spinach salad.
10. Microwave the soaked slice of bread in gravy then add it in the center.
11. Carefully flip one side onto the other. (or stop here and eat it as an open face sandwich.) Press down and carefully cut on a diagonal with a serrated knife.
Ta da! Mmm….Thanksgiving dinner between two slices of bread…

ReplyDeleteI'm glad you like my blog Reiley! You know you can make the exact same sandwich without meat...or tofu or seitan or any other "fake" meat... it'll probably taste all the same! :)
